Jack-O'-Lantern Cheese Ball
Yield: Makes 16 to 18 servings
A touch of pumpkin and spices lend a delightful flavor to this distinctive cheese ball.
Ingredients:
2cups (8 ounces) shredded Cheddar cheese
1/2(8-ounce) package cream cheese, softened
1/4cup solid-pack pumpkin
1/4cup pineapple preserves
1/4teaspoon ground allspice
1/4teaspoon ground nutmeg
1pretzel rod, broken in half
Dark rye bread, red bell pepper, black olive slices and fresh parsley
Assorted crackers


Preparation:
1.Beat cheeses, pumpkin, preserves and spices in medium bowl until smooth. Cover; refrigerate 2 to 3 hours or until cheese is firm enough to shape.


2.Shape mixture into round pumpkin; place on serving plate. Using knife, score vertical lines down pumpkin. Place pretzel rod in top for stem.


3.Cut bread into triangles for eyes. Decorate pumpkin, using bread, pepper, olives and parsley.


4.Cover loosely; refrigerate until serving time. Serve with crackers.
Whoever does this first, take a picture!
Here's another recipe that I found. I think I like it better than the cheese ball. This one is for individual servings. It's really cute and you can also use it Thanksgiving... Big Grin

Cheese Pumpkins

8 tablespoons smoked Cheddar cold pack cheese food (from 8-ounce container), well chilled
2 teaspoons finely chopped peanuts
4 butter-flavored pretzel spindles or sticks, broken in half
16 tiny pieces fresh parsley leaves
Line small serving plate with waxed paper. Roll each level tablespoon cold pack cheese food into a ball; place on waxed paper-lined serving plate. Refrigerate 10 to 15 minutes for easier handling.
With end of toothpick, draw ridges around balls to resemble pumpkins.
Dip bottoms of cheese balls in chopped peanuts.
Just before serving, insert pretzel halves into cheese balls for pumpkin stems. Decorate with parsley for leaves. Store in refrigerator.

Spider Web Dip

1 (16-ounce) jar (1 3/4 cups) black bean dip
1 (12-ounce) container guacamole
1/4 cup Sour Cream
1 cup shredded lettuce
4 ounces Cheddar Cheese, shredded
1/2 cup chopped tomato
Tortilla chips
Spread bean dip onto center of large platter, leaving 1 to 2 inches around edge of platter. Carefully spread bean dip with guacamole.
Spoon sour cream into resealable plastic food bag. Snip off corner. Pipe sour cream in 4 concentric circles onto guacamole. Drag toothpick or knife through sour cream from center outward to make spider web design.
Layer lettuce, cheese and tomatoes on edge of platter. Serve with tortilla chips.
Makes 15 servings.
